Fall Menu Spotlight: Eggplant Tartine

Our Eggplant Tartine is a staff favorite from the fall menu. It can be difficult for our waiters to describe but it is one of the most unique and flavorful dishes on our fall menu. It’s listed as an appetizer but the Eggplant Tartine could also be a wonderful meal.
 
Traditionally a tartine is an open-faced sandwich using only one slice of bread. Our twist on the tartine is to make it a crispy, Mediterranean open-faced sandwich. We start with a large piece of crisp pita bread, then top it with our red-pepper hummus. We add eggplant, tomato, onion and garlic on top of the hummus. We finish it off with parmesan cheese and pistachio pesto. We know once you’ve tried the Eggplant Tartine, you’ll love it. Enjoy!
