With SXSW just around the corner, we thought we’d give some of our out-of-town visitors the skinny on one of our most popular breakfast items, Migas (pronounced ‘me-gus’.) Those of you reading this from within Texas are already quite familiar with Migas but for people from other parts of the country/world it’s quite a mysterious item.
Basically, Migas is eggs scrambled with pico de gallo and broken tortilla chips, topped with enchilada sauce and cheese. At Kerbey we have several different ways to get Migas. The most popular is the Migas platter, which is served with your choice of sauce, black beans and rice with your choice of soft tortilla on the side. You may also want to try our Paris Texas platter. The Paris is a plate with Migas and then a separate plate with French Toast. Now, we are known for our delectable pancakes so, feel free to trade out the French Toast with any two flavors of pancake on that dish. We also serve Migas Tacos, which can be either one or two tacos with your choice of enchilada sauce and either Flour, Corn or Whole Wheat tortillas. The main difference between the Migas Tacos and the Migas platter is presentation. With the Migas Tacos we put your Migas in your choice of tortilla, rather than serving the tortillas on the side. Also, the Migas Tacos are not served with sides, so you won’t receive any beans or rice. Lastly, the Migas Tacos have fresh jalapeños added so, if you can’t handle spicy foods make sure to ask your server to leave them out.
Now that you know the different ways we offer our Migas you should know our sauce choices. Our Ranchero is a mild red sauce a great choice if you don’t like things to be very spicy. The Verde is a tangy tomatillo sauce with jalapeños, it’s a little spicy but not our hottest. If you are looking for some spice in your life, you’ll want to choose our Chipotle salsa. The Chipotle salsa is a smoky, red enchilada sauce and is definitely our spiciest offering. Last but certainly not least, for a slight up-charge you can have your Migas smothered in our legendary Queso. All of our Migas dishes are served with cheddar-jack cheese but our Queso is a melted, white cheese sauce that is not to be missed.
If you’re a Vegan, you can still order Migas. We have a seasonal Tofu Scramble, which can be substituted for any egg offering on our menu, including Migas, and the Ranchero, Verde and Chipotle salsas are all Vegan-friendly. We even have a Vegan Queso, which you can certainly order with Migas. You can even order the Paris Texas platter Vegan-style by substituting the French Toast for Vegan Pancakes.
If you want to be a real Migas pro try adding bacon, sausage, soy sausage, spinach or veggie chorizo in your Migas. Choose two different sauces if you can’t make up your mind. Put one sauce choice on the Migas and the other on the side, or both on the side or both on the plate. If you’re not a fan of black beans or rice we can give you homefries instead. The long and short of it is, if you are only visiting Austin for a short time make sure you try some Migas before you head out of town. See you at SXSW
