This week has been all about preparing for the Fall Menu at Kerbey Lane Cafe. Chef Joel has finalized his recipes and he is slaving away in our commissary those recipes to his first of six sets of cooks. We spent the last few weeks getting in touch with our friends out at the local farms and ranches to make sure they could supply us with the fresh, seasonal ingredients we want in the quantities we need.
 
In the next week or so, Chef Joel will visit each of our five locations along with our training coordinator Kelly. They will make all of the meals from the Fall Menu alongside the cooks, who will then give it to the servers so they know what everything looks like and tastes like. Before the seasonal menu is presented to the guests, both the cooks and the servers take a test in which they must demonstrate knowledge of the food and its sources. Everyone hates the test part but they love the eating free food part.
 
Last week we teased a couple of items you can expect on the Fall Menu. We’re not going to tease anything else this week but we did want to share an exciting realization we made this week. As you know, Pumpkin Pancakes make their return on the Fall Menu, which is exciting in and of itself. However, once we have Pumpkin batter we can feature Pumpkin Cinnamon Roll pancakes. They won’t be available all the time but they will be available for a full week about once a month or so. How exciting is that?
 
If you are planning to make your way to a Kerbey Lane Cafe this weekend, and we hope that you are, we’ll have Elvis Pancakes all weekend long. It’s a buttermilk batter with bacon and banana added. To complete the Elvis-y goodness we finish off these bacon-banana pancakes with a delectable peanut butter sauce. Each element of this pancake is fantastic on its own so you can imagine when their forces combine they are out-of-this-world delicious.
